How to Make Ravioli

This month we celebrate THREE years of our little place here on the internet!  Three years of: stirring, chopping, boiling, sauteing, simmering, braising, frying, stuffing, baking, cooking and loving every minute of it. Even the ones where we burned something, and yes it happens. Cooking and taking photographs is so therapeutic for me. I can’t imagine NOT doing either. Besides cooking, and shooting what I’ve loved equally is connecting with all of you. Before I get all sappy and need Kleenex we have some exciting things planned this year and one of those is a monthly homemade pasta series. I’m thrilled to be able to get back to my love of homemade pastas. We’re kicking off with ravioli stuffed with a creamy dreamy RICOTTA cheese filling.

I was taught how to make pasta while I lived in Italy the old school way, with a hand crank and that’s how I’ve done it for years (up until recently). I can tell you that now that I’ve tried pasta making with my KitchenAid stand mixer and attachments, I’ve found that it’s much faster and I make it more often! This monthly pasta series will focus on making pasta using a stand mixer and various attachments. It can all be done by hand with a little muscle though if you want to go that route.

We’re kicking off our pasta 101 series with RAVIOLI! Everyone loves ravioli and you can stuff yours with just about anything, today we’ve gone with a easy crowd pleasing RICOTTA filling. I like to make a double batch when I’m making mine, flash freeze them and then put them into freezer bags so I have some when the cravings hit (and they always do). For these cheese ravioli I like to make a quick sage and butter sauce or I’ll go with a simple TOMATO SAUCE.

It’s amazing what flour, eggs, and a pinch of salt can do isn’t it!

How to Make Ravioli

What You Will Need:

  • 2 3/4 cups all purpose flour
  • 3 eggs
  • pinch salt
  • Filling:
  • 2 1/2 cups ricotta
  • 1/2 cup Parmigiano Reggiano - grated
  • 1 egg
  • 1 orange - zested
  • salt/pepper

What To Do:

  1. Place flour into the bowl of your stand mixer. Create a well. Add eggs, salt. Using paddle attachment, mix together until a ball forms. Scrape sides as necessary.
  2. Switch to dough hook and knead dough for approximately 5-6 minutes. Cover mixing bowl with kitchen towel and allow dough to rest for at least 30 minutes.
  3. WHILE dough is resting: Into a medium bowl add: ricotta, Parmigiano, egg, orange zest. Season with salt and pepper. Mix together until well combined.
  4. Attach roller attachment to mixer. Cut dough ball into 4 equal portions. Take 1 portion and flatten it with your hand. Run through roller attachment until it reaches a level 4 thinness.
  5. Attach ravioli attachment to mixer. Drape dough over attachment. Place filling into attachment. Slowly turn attachment handle to form ravioli.
  6. Continue same process with 3 remaining dough portions.
  7. Cut ravioli perforations using a pastry wheel.

    Wow, what a gorgeous mixer! It makes my 26 year old mixer look pretty old and tired!
    The first thing I would make is these yummy looking raviolis! I can’t make anything this fabulous on my old Mixmaster, so I would be in heaven using this beauty every day, mixing up all the things I cannot do now with my current mixer.

    One of my favorite traditions is making homemade tortellini with my mom — haven’t done ravioli before, but this is a great excuse!

    We mix our pasta dough by hand, so if I won the Kitchenaid stand mixer, I’d use it to make dough for our favorite anise and pistachio biscotti!

    Thank you for this wonderful giveaway! On a student’s budget, I have yet to purchase a stand mixer, let alone a 7 quart beauty! I would make my mother’s birthday cake – smittenkitchen’s best birthday cake (yellow cake) and a chocolate butter cream. I never made a layer cake + frosting before; it’s hard without a stand mixer!
