Cinnamon Buns


Week #8 of the Bread Baker’s Apprentice Challenge was Cinnamon Buns & Sticky Buns. Can I just say that I have been waiting on this week since the start of this challenge. I have a wicked sweet tooth and these are right up my alley. Peter said that this version makes a bun that outperforms all of those mall buns you might be used to having. Well, of course I had to try to make these Cinnamon Buns for myself! Sticky Buns would have to wait for next time.

This was another recipe that only took one day to make, which in my book is a def plus. The hardest part for me was the waiting around. Marta worked like a champ with this dough as well! I know I’ve said it many times before but working with the dough is so therapeutic! Oh, yes & the rolling it up like a cigar shaped log – that was a little tricky. But I worked my way around the rolling issue.

I can’t tell you how amazing these buns smelled even before going into the oven. I did modify Peter’s recipe slightly (I’m feeling a little bolder now that I’m two months into my apprenticeship LOL). I added some melted butter before sprinkling the dough with the cinnamon sugar & upped the cinnamon sugar factor slightly (I like my buns ooey & gooey).

Of course, I had a crowd when these came out of the oven! Oh they were heavenly. I quickly whipped up the glaze & used orange extract for a little different kick & then oh so carefully drizzled the buns with the glaze! It slowly flowed over the tops & covered the buns like…okay I’m getting way too into this…well thankfully I managed to save one bun from total annihilation to take some pictures. Once I snapped a few, I devoured mine completely! It was that good!

then we add the flour – King Arthur of course, yeast & milk

    My mother used to make these often when I was a kid.
    I made them a couple of months ago for the first time and ate almost half the batch in one afternoon.

    Beautiful photos! I really liked the combination of lemon with the cinnamon, which surprised me. I’ll have to try the orange extract next time. Yum!

    These look wonderful and the pictures came out great! They’ve made me drool!

    But I don’t see the recipe, like with the exact amounts, etc. Am I missing something? This is my first time on your website. I just joined after you friended me on a cooking site. 🙂 I was also wondering what you put exactly in the glaze.

      Ciao! Thanks so much for stopping by. No, you aren’t missing anything. I am paricipating in The Bread Baker’s Apprentice Challenge. We are baking every one of Peter Reinharts recipes in this book (The Bread Baker’s Apprentice), one recipe at a time. Since they are not our recipes we aren’t posting them but I will tell you if you would like great bread recipes it’s an amazing book & you should pick it up. I’ve made these cinnamon buns several times & they’re always a hit. The glaze consisted of milk, confectioners sugar & some orange extract. Easy Peasy!
