Ziti al Prezzemolo {Ziti with Parsley Sauce}


This is a quick and easy pasta dish that’s perfect for warmer weather! It takes all of about 8 minutes to pull together. Pretty much in the time it takes you to cook your pasta to al dente perfection you’ve got your dish complete. It’s fantastic for lunch or as a light dinner! 


You can make this with just about any short pasta that you like {well okay maybe not elbows}, I had Ziti on hand today, so alas ZITI was the chosen one {for today anyway ; 0} And thanks to my deck herb garden {which btw I REALLY would encourage you to grow your own herbs, anyone can! You don’t need an entire plot of land, all you need is a pot, dirt, sunshine and a smidge of TLC and voila!} which is starting to look like a jungle out there! And I couldn’t be happier about that! *rubbing hands together* I’m about to be up to my ears in tomatoes, wahoo! 


The Ziti is topped with the simplest of sauces! Simply a whole lot of Parsley & butter – but it makes a big impact! You could think of it as somewhat of a Parsley Pesto! I like to garnish mine with a drizzle of good quality extra virgin olive oil and then add my cheese shavings {this btw you just achieve using your veggie peeler *wink wink*} But if you prefer you can always break out your microplane grater and shave away! Either way it’s dee-lish!  If you don’t have Parmigiano on hand {but look at her sitting there in all of glory, yes I dream about Parmigiano, don’t you? LOL} you can substitute Pecorino!



 What you’ll need:
1 pound box Ziti
1 large bunch of fresh Italian flat leaf parsley – stems removed & roughly chopped
2 cloves of fresh garlic – crushed
4 tablespoons of unsalted butter
Parmigiano Reggiano – shaved
Extra Virgin Olive Oil

What to do:
Place a large pot of salted water onto boil. When water is rolling add the pasta and cook until aldente. WHILE the pasta is cooking. Into a medium size saute pan, melt butter. Once melted, reduce heat add garlic and cook until garlic is golden. Remove garlic and discard. Add the parsley, season lightly with salt and pepper. Stir well to combine. Remove from heat. Drain pasta, transfer to the saute pan. Toss well to combine. Garnish with Parmigiano Reggiano shavings & a drizzle of olive oil.

    Ah, yes — the comfort of a bit of simply dressed garlicky pasta. Definitely a great recipe for using up all the bounties of the herb garden — and there are countless variations! Luv thinking about all the antioxidants in there too!

    ziti is by far my favorite tube pasta…i like to stick the tines of my fork through the tubes and eat them 3 at a time 🙂

    I’m a great pasta lover but I never heard of this recipe. Looks great (especially now in these hot days) and very simple to make. Will try it next week, but judging from the ingredients I’m sure it’s delicious!

    I love the simplicity of this. I’m going to make it for dinner tonight. I will probably just braise a couple of chicken breasts with some garlic and a little pesto added at the end. I think I will add some asparagus on the side.
