Datteri Ripieni {Cheese stuffed dates with Prosciutto}


I love quick and easy appetizers. I also like to shake things up. This recipe fits both of those criteria. Datteri Ripieni are Italian for stuffed Dates. These are stuffed with a creamy and luscious combination of goat cheese and mascarpone cheese. With some herbs thrown in for good measure. This is a sweet, savory and salty little package that will tickle your taste buds.

To make my job even easier I like to purchase the dates that are already pitted. Their holes are just sitting there begging to be filled with cheesy goodness. And who am I to disappoint them ; ) You can even prepare these in advance, pop them into your fridge and pull them out about 20 minutes or so before guests arrive so they can come up to temperature. Easy peasy entertaining {is there any other kind ; ) not in my house LOL}

I will warn you, they’re quite addictive. You don’t even want to think about halving the recipe, oh no tee hee.




What you’ll need:
2 ounces goat cheese – room temperature
2 ounces mascarpone cheese – room temperature
1/4 cup fresh basil – finely chopped
8 ounces dates – pitted
8 slices of prosciutto – sliced into strips that are wide enough to wrap around your dates

What to do:
1. Into a bowl mix together the cheeses, basil. Season with salt and pepper. Place cheese mixture into a piping bag fit with a long slender tip.

2.  Pipe the cheese filling into each date. Wrap each date with a slice of prosciutto. Secure with a toothpick.
