Frico con Patate {Potato and Cheese Fry}

I think it’s HIGH time that I focus on food from my most favorite region in Italy. While you all know I adore Italian food, you might not know that I REALLY adore Friulano food. That is food from the Fruili Venezia Giulia region of Italy or Friuli for short ; ) All of my years living there might have something to do with that ; )

Frico is definitely Friulano! As with most Italian dishes there are a gazillion variations depending on which town you visit. One of my favorite Frico’s is Frico con Patate! It’s made with just a few ingriedients: onion, potatoes, and cheese {what’s not to love right}. Not just any cheese!  Montasio Cheese! Which is of course native to Friuli. If you haven’t ever tried this cow’s milk cheese it’s creamy, rich and slightly fruity. Completely swoonworthy.

Montasio cheese has been around since oh about the 1200’s and we have the Benedictine monks to thank for it. All these years later it has been awarded the coveted DOC {Denominazione di Origine Controllata} appellation. It’s good stuff, trust me!

The trick to making a good Frico is not to rush it. Saute your onions, add those THINLY sliced potatoes. To get those sliced perfectly the trick is to use a MANDOLIN slicer. This way all of your slices will be uniform and beautiful and take all of about 1 minute to slice. I have the OXO Good Grips MANDOLIN SLICER and love it. It has a super large cover {hello safety} and it has non slip feet so it stays in place! Then you’ll add your broth {use any that you like I use chicken broth which gives it a nice deep flavor} let it reduce and cook those potatoes to tender perfection and then the MONTASIO CHEESE which melts to bubbly perfection. I like to put mine under the broiler to give it a little extra boost ; )

You can easily double the recipe {just make it in a larger frying pan}  and you’ll probably want to otherwise you might not get any ; ) It disappears faster than money in my house!

Frico con Patate {Potato and Cheese Fry}
What you’ll need:
1 tablespoon unsalted butter
1 small onion – minced
4 medium potatoes – peeled and sliced thin
1 cup broth
1 cup Montasio cheese

What to do:
1. Spray a medium size frying pan with cooking spray. Add butter and melt over medium heat. Add onions, reduce heat to low and saute until translucent. Stirring as necessary.

2. Add the potato slices and stir to combine. Add broth and cook until the stock is absorbed and potatoes are tender. If  potatoes are not tender when the stock is getting low, add more if necessary. Top with cheese, cover and allow to brown.

3. Transfer to a serving plate and serve warm.
