Torta all’Olio di Oliva {Olive Oil Cake}

Olive oil cake is one of life’s little pleasures. It is a cake unlike others. Don’t let it’s simple appearance fool you, it’s flavorful beyond belief. The olive oil makes it luxurious and fragrant. The smells coming from the oven will tempt you, and taunt you before it even touches your fork let alone before it tickles your tongue. For this cake you simply MUST use the finest extra virgin olive oil you can put your hands on. It is after all the star of the cake. And the star is a diva and demands to shine though ; ) !

So what extra virgin olive oil did I use? I used Nudo Extra Virgin Olive oil. It’s rich, decadent and BOLD.  There’s just something magical about a good quality extra virgin olive oil. Just a dab sets your taste buds a flutter. A good olive oil gives me goosebumps. It’s color is like liquid gold. It smells like heaven and tastes sublime. It’s something I’m never without in my kitchen. Never.

Torta all’Olio di Oliva {Olive Oil Cake}
What you’ll need:
1 tablespoon unsalted butter – room temperature
3 large eggs – room temperature
1 cup sugar
3/4 cup extra virgin olive oil
1 lemon – zested and juiced
1/4 cup whole milk
1 1/2 cups all purpose flour
1 1/2 teaspoon baking powder
1 teaspoon salt
powdered sugar – to garnish
What to do:
1. Preheat oven to 350 degrees. Grease an 8″ cake pan with the butter and lightly flour. Set aside.

2. Into your stand mixer with your paddle attachment attached, mix the eggs and sugar until well combined. Add oil, mix until well combined. Add lemon zest, 1 tablespoon lemon juice. Mix to combine. Add milk. Mix to combine.

3. Into a separate bowl, add flour, baking powder and salt. Whisk together.

4. GRADUALLY and slowly add flour mixture to wet ingredients until well combined.

5. Pour mixture into the greased/floured cake pan. Bake for approximately 35-45 minutes or until it passes the toothpick test. When cooked, transfer cake to a cooling rack and allow to cool. Garnish with powdered sugar prior to serving.

    I bought some specialty flavored olive oils at a local foods show (I’m super excited about the passion friut one!), and was wondering if you think flavored olive oils can be used in olive oil cake? I know people add lemon juice frequently to make lemon olive oil cake, but since I have the flavored oils I am wondering if most of the flavor would bake out of the olive oil or it wouldbe ok…thanks!
