I’m always honored when someone asks me to develop a recipe for them. This is one of those occasions. Giulia, one of my favorite cutie patutuie and super talented blogging friends {Juls writes her blog in both Italian and English and takes some of the most beautiful droolworthy fotos around}, asked me to contribute a pasta recipe to VOIELLO, an Italian site that has amazing recipes and products. Although the site is written in Italian, you can still drool over the photos or you can always use google translate if you don’t understand Italian ; )

Savory Rotini

I decided on a Savory Rotini pasta or Rotini Saporiti. It’s full of some of the beautiful robust flavors I think of when I think of Italy: olives, olive oil, capers, San Marzano tomatoes, and I can’t forget basil and oregano. It’s simple it’s preparation but complex in it’s flavor.

All you need to go with this beautiful pasta dish are good company and a bottle of wine ; )

Rotini Saporiti {Savory Rotini}
What you’ll need:
4 tablespoons extra virgin olive oil
3 cloves garlic – minced
1 tablespoon – capers, drained
28 ounces San Marzano Tomatoes, chopped
1 small red chili – seeded and chopped
1/2 cup Italian Black Olives – sliced
1/2 cup Italian Green Olives – sliced
1 tablespoon fresh oregano – roughly chopped
1 tablespoon fresh basil – roughly chopped
1 pound Rotini pasta

What to do:
1. Heat oil in a deep sided pan. Add capers and garlic, sauté until fragrant. Add tomatoes and chili. Season with salt and pepper. Bring to boil, reduce heat. Cover and simmer for approximately 20 minutes. Stirring as necessary.

2. WHILE sauce is cooking, place a large pot of generously salted water on to boil. When boiling, add pasta and cook until just short of al dente.

3. After sauce has simmered for 20 minutes, add olives, oregano and basil. Stir to combine. Add pasta and continue cooking for just a minute or so.

Serve immediately.
