Pollo al Brandy {Chicken with Brandy}


I’ve said it a gazillion times, chicken is so incredibly versatile. So much so, I don’t know how anyone could ever tire of it ; ) At least that’s what I keep telling my family LOL. We’re big fans of chicken thighs and legs in our house. Not that I don’t like the chicken breasts, the darker meats just seem to be more flavorful to me and the fact that they’re also less expensive doesn’t hurt ; )

Couple them with mushrooms onions and a boozy brandy sauce, and I’m a happy camper. I’m a sauce girl, what can I say. And don’t worry, the brandy actually cooks all of it’s alcohol off so you won’t be getting tipsy from the chicken. Now the wine that you serve with it, that’s another story ; )

This is a quick and simple dish that’s full on flavor. I served it “fancy potatoes” that I sliced up with a mandolin and cooked with onions and chicken stock. It’s basically my FRICO without the cheese : ) They’re a crowd pleaser and paired well with the chicken.


Chicken with Brandy


  • 4 tablespoons unsalted butter
  • 6 bone in chicken thighs {or combination of thighs and legs} skin on – patted dry
  • 1 medium onion – sliced thin
  • salt/pepper
  • 2 tablespoons fresh flat leaf Italian parsley – roughly chopped
  • 3/4 cup brandy
  • 1/4 cup chicken stock
  • 8 ounces mushrooms – sliced


  1. Into a large deep sided pan add butter. Melt over medium-high heat. Add chicken and onions. Season with salt and pepper. Cook chicken until brown on all sides. Turning as necessary.
  2. Add parsley and brandy. Reduce heat to low. Cover and cook for approximately 25 minutes.
  3. Add mushrooms and chicken stock. Continue cooking for an additional 10-15 minutes OR until juices from chicken run clear.
  4. Garnish with additional parsley if desired.

    Mmmmm looks excellent. I love legs and thighs too but my men are white meat only – which is okay, I guess, when I make a whole chicken. I do wish, though, that they’d loosen up a bit since it is cheaper to go with legs/thighs. Oh well! 🙂
