Roasted Tomato Pesto

Pestos can be pulled together so quickly and add so much flavor to a dish. I’ve been experimenting  with different variations of pesto and came up with this oven roasted tomato pesto that besides oven roasted tomatoes also incorporates sun dried tomatoes. More tomato flavor than you can shake a stick at ; )

Did you know that you can also freeze pesto? Well you absolutely can. I love to freeze it in ice cube trays so that I have just the right amount for a recipe when I need it. They’re great plopped into soups, and once thawed as a spread for sandwiches, a sauce for pasta, OR as a filling for stuffed meats. You really can’t go wrong with pesto.

    It’s so funny how great ideas are just staring you in the face. I’m definitely gonna veganize this. Since I’m broke, I’ll probably use a different kind of nut and sub the parm with nutritional yeast. Yay!

    What an inspired pesto, roasting the tomatoes is a wonderful way to obtain exceptional flavor. Freezing really works well with traditional basil pesto. So much fresher than “store bought”. Fabulous end of summer recipe.

    I’ll admit that my pesto didn’t turn out looking like this. I didn’t have sun dried tomatoes in olive oil – just the dry sun dried tomatoes. I added more olive oil but it still didn’t have the consistency that it does in this pic. Regardless, it tasted great. I froze the sauce in small containers, so I can make a quick weeknight pasta. Thanks for the recipe.
