Capellini in Bianco {Angel Hair Pasta with White Sauce}

Capellini {can also be called Capelli d’Angelo} in BiancoΒ  is a simple 10 minute meal that will satisfy you completely. Bianco means white and refers to the simple cheese sauce that coats this delicate pasta. Normally I prefer a spaghetti or linguine {which is probably why this is the first angel hair recipe on the site tee hee} but here it’s the perfect fit for this sauce.

While the water is boiling you can grate your cheese and set the table. You’ll make the sauce as soon as the pasta goes into the water and then merry the two together once the pasta is al dente. Add a little bread and wine and you’re all set! 10 minutes and dinner is served!

Capellini in Bianco {Angel Hair Pasta in White Sauce}
What you’ll need:
1 pound capellini pasta
4 tablespoons unsalted butter
1/2 cup heavy whipping cream
3/4 cup swiss cheese – grated

What to do:
1. Place a large pot of generously salted water onto boil. When boiling add pasta and cook until al dente. Reserve 1/4 cup of the pasta water in case needed.

2. WHEN the pasta goes into the water heat a sauce pan over medium heat. Add butter reduce heat to medium-low. Melt butter. Add cream. Whisk to combine. Add cheese. Place drained pasta on top and toss to combine. If mixture is too thick add a little of the reserved pasta water. Season with salt/pepper.

Serve immediately.

      Hi Debbie! Yes, absolutely. Gruyere would be lovely but any nice melting white cheese would work.
