Potato Pizza {Pizza alle Patate}

Now that we’ve shared HOW TO MAKE PIZZA DOUGH you must have known there were going to be MORE pizza recipes right ; ) And why not, it’s pizza. Everyone loves pizza! I know we do. You’re in for a treat with this potato pizza. Yes POTATO! Not just any potatoes, purple potatoes! Look at that gorgeous color! They’re not only a pretty face, oh no, they pair beautifully with sweet Italian sausage, fresh rosemary and cheese. Glorious cheese. Go ahead and get your grocery list ready, you’ll want to make this. Trust. Me.

You’ll start by slicing those gorgeous potatoes. Now, I have to admit I didn’t get those perfectly round slices with my knife. I did use it to cut the potatoes in half though ; ) I used my mandoline to slice. It gives me perfectly sliced pieces every time. Remember the mandoline is your friend as long as you use the protective cover! SAFETY FIRST those babies are sharp! You want your slices to be thin but not so thin that they fall apart during the parboil stage. I like mine somewhere between the 1/4 – 1/8″ setting.

Next you’ll roll out that  beautiful dough. The thinner the better in my opinion. Now here’s the part where having a few extra kitchen tools helps out. A pizza stone and a pizza peel have been worth their weight in gold in my kitchen BUT If you don’t have them, no worries, try this it works in a pinch: insert a rimmed baking sheet upside down in your oven in place of the pizza stone. Be sure to lightly coat it with cornmeal so that your pizza doesn’t stick. And instead of a pizza peel try using a flat baking sheet lighted coated with cornmeal so that the pizza slides off and onto the baking sheet in the oven!

The potatoes combined with that sweet Italian sausage that’s infused with so many fantastic herbs and then the cheese oh.my.Kerry Gold Cheese. If you haven’t had their cheeses run. go. now. Yes, it’s that good!

Pizza alle Patate {Potato Pizza}
What you’ll need:
2 medium purple potatoes – sliced into thin rounds
2 tablespoons extra virgin olive oil – divided
3 Johnsonville Sweet Italian Sausage Links – casings removed
1 cup Kerry Gold Blarney Castle cheese – grated
flour – to dust
cornmeal – to dust
1 sprig of fresh rosemary – minced

What to do:
1. Have your  PIZZA DOUGH prepared and waiting.

2.  Place your pizza stone into oven. Preheat oven to 450 degrees.

3. Into a saute pan add 1 tablespoon oil and heat over medium heat. Add sausage, breaking up as you cook. Cook sausage until done. Drain any excess liquid. Set aside.

4. WHILE sausage is cooking, place a medium sauce pan halfway full of water onto boil. Season with salt. Place potato slices into water and boil for approximately 4 minutes OR just until tender. Using a slotted spoon, remove from water and transfer to a kitchen towel to remove excess water.

5. Roll out pizza dough on a lightly floured surface. Transfer dough to pizza peel that has been lightly dusted with cornmeal.

6. Drizzle pizza dough with approximately 1 tablespoon olive oil. Arrange potato slices in a circular pattern. Season with salt. Top with cheese and then sausage. Transfer pizza to pizza stone and cook for approximately 8-10 minutes OR until crust is crispy and cheese is bubbly. Garnish with fresh rosemary.

    this pizza looks great. A potato farmer friend of ours up here grows these and I’ve cooked with them before , but never tried using them in pizza.
