Ricotta and Endive Appetizer

If you’re looking for a healthy appetizer you’ll love this super simple endive recipe. What exactly is endive? “Endive is a member of the chicory family, which includes radicchio, escarole and curly endive. It is often called the queen of vegetables and is prized the world over. It has a crisp texture and a sweet, nutty flavor with a pleasantly mild bitterness — great served raw or cooked.” And did you know that endive is ALWAYS in season. So you can make this and other endive recipes all year round.

I’m pretty impressed with these gorgeous heads of endive. Here’s a few fun facts about endive (on-dive) that you might not know.

  • ENDIVE keeps longer than most other lettuces — 10 to 14 days in the refrigerator
  • ENDIVE is the “Slimmer Dipper” — lower in calories and healthier than crackers or chips.
  • There’s no need to wash ENDIVE. Just trim the bottom and you’re ready to go!
  • On a per pound basis, ENDIVE is less expensive than bagged salads and most crackers.

Ricotta and Endive Boats


  • 2 tablespoons sliced almonds
  • 2 tablespoons craisins
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons chopped fresh lemon thyme
  • salt/pepper
  • 1 1/2 cups ricotta
  • 2 endive heads
  • honey to drizzle - optional


  1. Into a small bowl add: almonds, craisins, oil and thyme. Season with salt/pepper.
  2. Place a dollop of ricotta onto endive leaf. Top with approximately 1 teaspoon of nut mixture.
  3. Drizzle with honey if desired.

    Yum yum yum – I never thought of putting endive pieces on a vegetable plate for dippers, but what a great idea! I want that ricotta mixture stat.
