Simple Summer Strawberry Bruschetta

Big beautiful (straw)berries are every where I turn at the moment. Which, btw, is never ever a bad thing. I could eat a bowl of those plump juicy sweet babies all day every day when they’re in season. Red Red wine all the way through, dripping their sweetness all over the place. Yes, sign me up, and be sure to give me a few napkins too.

What else do I love about them? Glad you asked ; ) They’re completely and totally versatile. Other than popping them into your mouths (which btw is mandatory no matter what you’re making with them) You can make smoothies, milkshakes, cocktails, pies, cakes, appetizers. Yes, appetizers like this super simple summer strawberry bruschetta (try to say that 10 x’s fast – yikes) that’s made with fresh ricotta and topped with that beauty of an herb, basil. Next time you’re having friends over, pass around a tray of these beauties.

    Those look so light and delicious – perfect for spring/early summer! I’d have to leave the basil off for hubby though (probably will use mint instead)… These are definitely on my list for next time I buy strawberries.
