Now that the weather is turning (somewhat) warmer I’m already starting to think about when I can drop the top on my new (to me) convertible, putt around town and enjoy the sunshine. It also means I gotta shed a few lbs that I’ve put on over the “it’s way too cold to go outside I’m just going to stay inside with a brick of cheese, some salami, a package a crackers and some wine months.” Tell me I’m not the only one? Please. Okay if you worked out all winter and already look amazing, I take it back please don’t tell me. Deal.
That means, like it or not, I’m working more veggies into my meals. Salad is a quick way to do that. For me to enjoy a salad it has to have a little something something to it. A fresh spin on salad is what I’m going for. No boring salads allowed. Ever. I partnered with HIDDEN VALLEY and created this Southwestern Ranch inspired chicken salad that has a lot of something something to it. It’s loaded with flavorful protein, and more veggies and legumes than I can shake a stick at. What else is in there Ranch x’s two. I’m sure I’ve mentioned to y’all in the past how much my family freaks out for Ranch dressing. They would seriously bathe in it if I’d let them. Needless to say they, and I loved this.
