Mushroom and Leek Spaghetti Carbonara
If you’ve known me for any length of time you KNOW that Spaghetti alla Carbonara is my hands down all time favorite meal. It’s the meal I would eat ALL. DAY. EVERY. DAY. That’s if I had a super ramped up metabolism and/or didn’t gain any weight no matter what I shoveled into my mouth.
I of course am not blessed with that metabolism. Nope, and if you are one of those VERY lucky people, please don’t tell me. That wouldn’t make me like you very much and I really want to like you.
The treadmill and I have a love hate relationship. Well all exercise in general falls under that category for me. I love how I feel AFTER I do it but I HATE doing it. Regardless, I try to incorporate exercise into my day every day so I can EAT all the good foods that call my name. It’s that simple. I just do it. Great slogan by the way yeah? Wish I would have trademarked that one. Nope, missed the boat on that one too.
What is Spaghetti alla Carbonara?
Spaghetti alla Carbonara is a traditional Italian dish. It’s made up of just a few simple ingredients but the final result is definitely roll your eyes into the back of your head, moan out loud worthy. I’ve shared several variations (because you know I can’t help tinkering with things in the kitchen, you wouldn’t however want me to tinker with say your car, that would be bad.) with y’all:
- BUTTERNUT SQUASH CARBONARA WITH FRIED SAGE LEAVES
- ASPARAGUS AND TOMATO CARBONARA
- VEGETABLE CARBONARA,
and now we’re sharing this Mushroom and Leek Carbonara that I think you’re going to equally love. I mean, there are sauteed leeks and mushrooms in there along with pancetta. How can that be bad? Right. It’s not. No fretting, just twirling.

Mushroom and Leek Spaghetti Carbonara
Mushroom and Leek Spaghetti Carbonara
Ingredients
- 1 tablespoon extra virgin olive oil
- 5 slices pancetta or thick cut bacon - cubed
- 1 leek - thinly sliced
- 8 ounces fresh mushrooms - sliced
- 2 whole eggs + 2 additional egg yolks - beaten
- 1 cup grated Parmigiano Reggiano
- kosher salt/black pepper
- 1 pound spaghetti
Instructions
- Place a large pot of generously salted water onto boil.
- Once boiling, add spaghetti and cook until al dente. Reserve 1/2 cup of pasta water prior to draining.
- Into a large saute pan add oil and heat over medium heat. Add bacon and cook until crisp.
- Transfer bacon to a plate lined with a paper towel. Set aside.
- To pan add: leeks and mushrooms. Season with salt and pepper. Saute until mushrooms have softened. Remove pan from heat.
- Into a small bowl add eggs and cheese. Season with salt and pepper.
- Transfer spaghetti to saute pan. Toss to combine. Add egg mixture.
- Toss to combine. If mixture is too thick add some of the reserved pasta water.
- Garnish with additional black pepper and additional cheese if desired.

Carbonara is so darn good, though I don’t make it very often because off all the reasons you mentioned (if only it had the same nutritional profile as a grilled chicken salad!) Nevertheless, this sounds wonderful!

I love those little spaghetti nests! What an amazing meal idea!! As for the working out… getting up to do it is the hardest. I even feel good DURING it and of course, amazing afterwards but getting over myself to do it takes a lot of discipline so you’re definitely not alone 😉
