Dark Chocolate Buttercream
When it comes to frosting I am of the opinion that buttercream is best. There I said it and I’m sticking to it. Sorry, not sorry and all that jazz. Butter. Cream. I mean what is there NOT to love about that? Well maybe all the calories but sometimes a girl has to splurge on something besides shoes. I’ve said it many times but I exercise so I can eat. Period.
Sadly I’m not one of those people that are blessed (yes you are BLESSED) with a fabulous metabolism and can eat e’vrything without having to even think about a treadmill. I eat e’vrything and then I MUST treadmill. Period. It’s a trade off I’m willing to make because again I like food.
All the food, which is a good thing considering cooking is my job.
I don’t make cakes often (because I’m not the best cake decorator on the planet and I tend to want to eat the whole thing when it’s in the house) but when I do and I take the time to bake one from scratch then I’m going to make the frosting from scratch too. You guessed it, it’s going to be some flavor of butter cream.
In the past, we’ve shared our ESPRESSO BUTTERCREAM and NUTELLA BUTTERCREAM recipes with you and we thought it was high time we shared the darker side of chocolate … buttercream. If you’re all about dark chocolate you’ll love this. It’s deep and decadent and pretty much makes my eyes roll back into my head when I’m licking the offset spatula, okay the bowl too. Yep, guilty.
I’m going to be completely honest and tell you that you’re going to want to use a stand mixer to make buttercream. You’re basically beating the patootie out of the butter (and the rest of the ingredients) for an elongated period of time so unless you’ve got powerful arms and stamina like Ronda Rousey (clearly I do not) it’s best to let the mixer do the work for you.
While it’s working it’s magic you can dream up what you’d like to slather this buttercream on. Besides eating it off the spatula, we like it with our Dark Chocolate Buttercream Dream frosting with our DEATH BY CHOCOLATE LAYER CAKE. It’s a choco-holics dream team.

Dark Chocolate Buttercream
Ingredients
- 4 sticks unsalted butter - room temperature
- 5.1 ounces instant chocolate pudding mix
- 1 pound powdered sugar
- 1/4 cup -1/2 cup heavy whipping cream
- 1 teaspoon pure vanilla extract
- 1/2 - 3/4 cup dark chocolate cocoa powder
Instructions
- Place butter and pudding mix into stand mixer bowl. Beat until light in color and creamy and no longer grainy from pudding mixture.
- Add powdered sugar. Beat until well combined.
- Add whipping cream, vanilla and cocoa powder. Beat until well combined.

I used to be able to eat whatever I wanted and not worry – that changed with age LOL Now I have to visit the treadmill. I love buttercream, too! NO better frosting in the world.

I am totally with you on Team Buttercream. As far as I’m concerned, all other frostings don’t even come close. And, of course, since I’m also a huge chocoholic, the best frosting of all in my books is chocolate buttercream… love that you’ve used both cocoa and chocolate pudding mix for an extra-chocolatey flavour in this version.
