Sparkling Strawberry Gelatin Molds

See it wiggle, see it jiggle. Sorry now the song is stuck in your head too. It’s most definitely in mine. There are worse things I suppose. Anytime I think about gelatin molds I think of my Grandma. She always prepared a festive mold for just about erry holiday you can think of.

Think layers upon layers of elaborate molds. I was always fascinated by them. It almost seemed ashamed to dive into them and mess them up. I said almost, because you know I totally dived in.

It’s amazing what you can do with a bundt pan. Or any other mold for that matter. You can make one giant mold or mini molds, totally up to you. Head’s up. They are a little slippery so keep that in mind when un molding OR you could end up with pieces all about. Good news is, if you’ve used a bundt pan you can fill the middle with complimentary ingredients and hide your little mistake.

Yep, I totally did that. Or you could spoon it into parfait glasses and add a dollop of whipped cream.

It’s still tasty either way. Things happen, and you just have to go with it yeah?

This one is a grown up version. We’ve given this one a little adult oomph by using a sweet Champagne. Oooh la la right. You could easily make it appropriate for all ages by using all ginger ale and no champagne but then it wouldn’t be sparkling.

    My granddaughter is absolutely crazy for gelatin desserts. She was here for the whole last week and we made one. I hadn’t done that in a long time and had forgotten how delicious it is!! And…thanks so much for putting that dang song in my brain.

    I caught a glimpse of Jacques Pรฉpin on Rachel Ray yesterday and they rolled out a huge tray of different jell-o molds because that’s one of his favorite desserts (and chocolate covered Oreos…go figure!:)This is so sparkly and festive, perfect for a holiday table!
