What else I’m big on are meals that come together quickly. This Cheesy Baked Beauty is just that. It’s one that is a great base to add onto as you need to clean out the fridge. Say you’ve got vegetables that need to be used quickly. Add them in and you’ve got yourself a primavera pasta bake. Want a little protein? No problem, add a handful or two of shredded chicken and voila.

This meal comes together quickly because we’re taking a few shortcuts. GASP. Shortcuts don’t have to mean you’re cutting out quality though. Nope. We’re using refrigerated pasta and we’re going to “Open up a Bottle of the Good Stuff”- Classico Riserva Pasta Sauce. We chose the Roasted Garlic (because gah-lic floats my boat) for this dish but honestly any of the five varieties would work. Once you’ve made the pasta, tossed it with Classico sauce and added the additional ingredients we’re going to top it with ALL THE CHEESE. Because we’re cheesy remember. Pop it into the oven and all that’s left for you to do is open up a nice bottle of wine to go with.

And maybe, possibly invite me over because I’m nice and I’ve been told I’m entertaining.

Baked Tortellini

Ingredients

  • kosher salt
  • 1 pound refrigerated cheese tortellini
  • 1 cup Classico Riserva Roasted Garlic Sauce
  • 1/2 cup fresh spinach
  • 1 cup grated mozzarella cheese with cream cheese

Directions

  1. Preheat oven to 400 degrees.
  2. Spray an ovenproof skillet with non-stick cooking spray. Set aside.
  3. Place a large pot of salted water onto boil. Add pasta and cook according to package directions. Drain.
  4. Return pasta to pot. Add sauce and spinach. Toss to combine.
  5. Pour into skillet. Top with cheese. Bake for 8-10 minutes OR until cheese is melted.
