Dreamfields pasta is an easy way to make your meals a little bit healthier. To make this soon to be fall/winter favorite dish, we’ll start by roasting a pan of root vegetables. Onto the baking sheet they go, tossed with a little oil, seasoning and herbs and into the oven they go until fork tender.
Pretty simple so far right? Towards the end of the roasting process you’ll cook your Dreamfields spaghetti according to package directions. Then it’s time to have a pasta party in a bowl. Everybody goes in and we grin!

Spaghetti with Roasted Root Vegetables
Spaghetti with Roasted Root Vegetables
Ingredients
- 1 bunch fresh carrots with steams - sliced vertically
- 3 parsnips - peeled and quartered
- 1 small red onion - sliced
- 2-3 tablespoons extra virgin olive oil
- 6 sprigs fresh thyme
- kosher salt/black pepper
- 13.25 ounces Dreamfields Spaghetti
Instructions
- Preheat oven to 425 degrees.
- Onto a sheet pan add root vegetables. Drizzle with olive oil. Toss to combine. Season with salt and pepper. Place herbs on pan.
- Roast for approximately 35 minutes OR until vegetables are tender.
- Place a large pot of water onto boil. When boiling add spaghetti and cook according to package directions. Drain.
- Toss roasted vegetables with spaghetti and serve immediately.
- Garnish with grated Parmesan if desired.
