Chances are when you think of jam you probably don’t associate it with bacon. Strawberry, raspberry and blueberry are more likely to come to mind first. While delicious, those are all sweet jams, this my friends is a savory jam. Bacon jam is my jam and I think after one taste it’s going to be yours too. I happen to agree with the phrase bacon makes everything better. This case is no exception.
What is Bacon Jam?
Bacon jam is a savory relish made of you guessed it, bacon. It also includes onions, sugar, spices and vinegar. Our version also has bourbon, hence boozy bacon jam. The ingredients are slow cooked until they are rich and sticky. I like mine as is, a thick consistency. But if you prefer, you may place the cooled boozy bacon jam into a food processor and pulse until it reaches your desired smoother consistency.

Ingredients
- 1 pound bacon, cut into 1-inch sections
- 1 onion, thinly sliced
- 1/3 cup packed light brown sugar
- 1/4 cup bourbon
- 1/3 cup balsamic vinegar
- 1/4 teaspoon red pepper flakes
Instructions
1. Heat a large cast iron skillet over medium-high heat. Add bacon and crisp. Stirring as necessary. Do this in batches if necessary. Transfer cooked bacon to a plate lined with a paper towel. Set aside.
2. Discard all but 2 tablespoons bacon grease.
3. Add onions to skillet and cook until softened. Add brown sugar. Mix to combine.
4. Carefully add bourbon which will deglaze skillet. Allow to reduce by half. Stirring as necessary.
5. Add balsamic vinegar, red pepper flakes and return bacon to skillet. Mix to combine. Continue cooking until mixture thickens.
Notes
Using a mandolin produces uniform slices.
