If you’re looking for a cookie that you can enjoy quietly this probably isn’t the cookie for you. The CRUNCH that you hear when you bite into a biscotti is part of what makes biscotti, biscotti. They’re not too sweet, have amazing texture and can be made with just about any combination of fruits and nuts you like. These biscotti feature pistachios and lemon which I think are quite the dynamic duo. Delish as is BUT we like things a little extra around here so we dipped half of our biscotti in chocolate and then sprinkled additional crushed pistachios on top.

WHAT ARE BISCOTTI?
Biscotti are twice baked Italian cookies that originated in the Tuscan city of Prato. They are oblong-shaped, dry, crunchy, and are great for dunking in coffee, tea or Vin Santo.
INGREDIENTS TO ADD TO YOUR SHOPPING LIST:
- Dixie Crystals granulated sugar
- eggs
- PURE vanilla extract
- lemon zest
- all purpose flour
- baking soda
- pistachios
- (optional chocolate dipping ingredients)
- semi sweet chocolate chips
- coconut oil
TIP: While it is more expensive, to save time, when I’m using a lot of pistachios in a recipe I prefer to purchase pre-shelled pistachios.

Pistachio Biscotti
Crunchy Pistachio Biscotti are perfect for dunking! Optional chocolate dipping encouraged.

- eggs

- pistachios
- semi sweet chocolate
- coconut oil

Notes
FOR OPTIONAL CHOCOLATE DIPPING ADD:
6 ounces semi-sweet chocolate chips
1 tablespoon coconut oil
Place chocolate chips and oil in microwave safe bowl. Microwave on MELT setting in 30 second increments until melted. Dip cooled biscotti halfway into chocolate. Sprinkle with crushed pistachios. Allow to set.
