If this doesn’t scream warm weather I don’t know what does! Isn’t she purty? And so festive! Not only can it serve as a stunning centerpiece it’s a juicy, luscious tasty treat! This is NOT your ordinary fruit salad though! Oh no! This perfectly coiffed pineapple is packed with a little punch!
Just be careful when you’re carving the Pineapple NOT to pierce the walls or the bottom. You don’t want all those beautiful juices leaking out all over the place now do you? The beauty of this is that you can use just about any fruit your little heart desires. I used strawberries, kiwis, bananas and of course pineapple in this one BUT I also love mango, papaya, grapes…You name it!
It would be ah-mazing with lychees {I just couldn’t get my hot little hands on any at the time, I know they’re strange looking but oh mamma are they GOOD} Now for the punch portion…Cointreau…that luscious orange liquor it just gives this a little something something extra. You’ll want to let the fruits mingle and get to know each for about an hour. I know it will be hard, you’ll want to dive in immediately BUT resist the urge. The longer they get to know each other the better it will be! Plus all those extra juices make a great base for a fruity drink ; ) That is if you have any leftover!

Pineapple Filled with Fresh Fruit
Ingredients
- 1 pineapple
- 1 banana - sliced
- 2 kiwi - peeled, sliced
- 6 large strawberries - sliced
- 2 tablespoons raw sugar
- 1 ounce of Cointreau Liquor
- juice of half lemon
- 1 sprig fresh mint
Instructions
- Cut the top off of pineapple. CAREFULLY remove the pineapple from the inside, using caution as not to pierce the walls or the bottom of the pineapple as this will be your serving vessel.
- Remove the core. Cube the pineapple and place into a large bowl.
- Add: banana, kiwi and strawberries. Pour lemon juice on top of fruit. Toss to combine.
- Add Cointreau and sprinkle sugar on top. Mix to combine.
- Place into refrigerator to chill for minimum of one hour.
- Prior to serving, transfer fruit into center of pineapple.
- Garnish with fresh mint
