Mushroom and Potato Casserole

I have a gazillion leaves falling all over my yard in every color of the fall rainbow. I adore watching them floating in the air until they gently find their way to ground with the other gazillion leaves {that part I don’t love so much because someone has to get those up} What do all these leaves have to do with food you ask?

Well leaves mean Fall and fall means comfort food, casseroles and calories. Two out of three ain’t bad right ; ) Okay let’s go with cardigans instead.

If you’re looking for something different in the casserole department I think this is for you. It’s bold, beautiful and belly-filling for sure. It would be simple gorgeous on your Thanksgiving table! If you have a mandolin this only has about 5 minutes of prep work and then you just pop it into the oven to work it’s magic.

If not, a sharp knife and a steady hand will work just fine, it will just take a little longer.

    I’ve had mushrooms in my casseroles before, but never with purple potatoes! This looks delish!
