Brushetta is one of my most favorite foods on the planet. It’s also one of the top 10 most mispronounced Italian words in my book. It is pronounced: brew-SKet-ta! I’ve actually had waiters in restaurants argue with me over this. Argue. Don’t get me started on that. Sideeye. Brushetta is an appetizer (or anytime all time snack for me) that is made up of grilled bread, garlic, chopped fresh tomatoes, and basil.
It’s one of the reasons I grow my own tomatoes and basil. Those flavors are so perfect it’s easy to transform them into other dishes including this bruschetta chicken skillet. It takes 20 minutes to pull this together. Not kidding. It’s definitely a weeknight wonder.

This 20 minute bruschetta chicken skillet is example of that. We’ve added pasta to give it even more uumph (the pasta cooks at the same time the chicken does so it’s still coming in at 20 minutes boom). It was begging for it. All that sauce, yes pasta was in order. I had to. Period.

20 minute Bruschetta Chicken Skillet Pasta
Bruschetta Chicken Skillet Pasta
Ingredients
- 1 pound ziti pasta
- 1 tablespoon extra virgin olive oil - divided
- 4 small boneless skinless chicken breast halves (approximately 1 lb.)
- 14-1/2 oz. HUNT'S® Diced Tomatoes, drained, liquid reserved
- 1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
- 1/4 cup KRAFT Grated Parmesan Cheese, divided
- 2 tablespoons chopped fresh basil
- 1/2 cup croutons, coarsely crushed
Instructions
- Place a large pot of generously salted water onto boil. Add pasta and cook until al dente. Drain. Set aside.
- HEAT oil in large skillet on medium heat. Add chicken; cook 3 to 4 minutes on each side or until done (165ºF). Meanwhile, combine tomatoes, mozzarella, 2 tablespoons Parmesan and basil.
- ADD reserved tomato liquid to skillet. Top chicken with tomato mixture; simmer on low heat 5 minutes or until mozzarella is melted and tomato mixture is heated through.
- Place pasta into serving dish. Add sauce. Toss to combine. Top with chicken and garnish with crushed croutons and remaining Parmesan.
