Iced Coffee

It’s already sweltering. I know, just a few weeks ago I was saying it was too cold and now I’m saying it’s too hot. I know. I know. Apparently my happy medium is in my house with the AC blasting while sitting under a blanket. Even though it’s hot out, one thing I simply can not give up is my espresso. It’s just not going to happen. For the safety of those around me every day it shouldn’t. But back to that whole sweltering thing. How do me and my beloved espresso get around that? With a cocktail shaker, and some ice. That’s how. Iced Coffee

Ingredients:
4-6 ice cubes
1 ounce espresso – cooled
1 teaspoon vanilla syrup
1 teaspoon International Delight creamerDirections:

  1. Fill a cocktail shaker halfway with ice.
  2. Add espresso, vanilla syrup,and creamer.
  3. Shake for 30 seconds. Strain into stemmed glass.

    That looks decadent and refreshing – but the amount of liquid in the recipe looks so small to fill that glass?
    Just one ounce of coffee?

      Hi Lisa, Thank you. They’re very small glasses (purchased at World Market). The recipe is for one drink.

    I tell ya, I’m not much of a coffee drinker but I do love a good iced coffee in the summer to put a little pep in my step! Great recipe, Paula. Stay cool in that awful summer heat – I feel ya here in Texas!
