Grilled Fruit and Mascarpone Bruschetta
Summer is winding down. I’m not sure I’m ready to let it go yet though. I love the warm weather, riding around with the top down music blaring (yes I’m that girl. I do however turn it down at stoplights because otherwise it’s just obnoxious), long sunny days, flip flops, sun kissed skin, and the smell of food cooking on the grill.
Pretty soon I’ll have to default to my grill pan but until then we’re going to keep the cover off our grill and the charcoal stocked. In fact (for those of us living in the states) I’m betting that a lot of you (us included) will be firing up your grills today and tomorrow to celebrate Labor Day. Work hard and play hard right? Right.
While you’ve got that bad boy (or egg, oh how I’d love one of those giant green eggs – dare to dream) fired up you might as well make your appetizer there as well. Why dirty up the kitchen if you don’t have to. You know how much I hate to do dishes. This little bite of Georgia goodness (because that’s where the best peaches come from – I’m a Georgia peach I should know) is a snap to pull together and goes with just about anything you’re serving.
In fact I think it does double duty, it could be an appetizer or dessert. Or both because seriously it’s that’s good. Juicy, sweet grilled smoky fruit, combined with a taste of velvety smooth mascarpone and finish with the crunch of perfectly toasted bread. How can that be bad? It’s borderline healthy right. Right.
I even think a drizzle of balsamic glaze to finish would also be faboosh. Options. They’re awesome. Now I know you’re hungry s grab your stone fruit, fire up the grill (or grill pan) and then grab our GRILLED FRUIT and MASCARPONE BRUSCHETTA recipe on DIXIE CRYSTAL’s site.

I made something similar recently but used goat cheese instead of mascarpone. Now I’ll have to try this too. YUM!
