Crock-Pot Slow Cooker Salsa Chicken
My Mom makes some of the best homemade salsa I’ve ever tasted. I think a lot of that has to do with just about every ingredient that goes into her recipe comes from her garden. She of course changes this recipe every single time she makes it so It’s never the same.
I think she does this so she doesn’t have to give me the recipe. Luckily she does share the salsa. When I’m home for visits I swap out my empty mason jars for full jars of homegrown tomatoes and salsa. Lots and lots of salsa.
Besides eating my salsa with tortilla chips one of my favorite things to do is make crock-pot slow cooker salsa chicken. It takes just TWO simple ingredients. Excluding salt and pepper because those are freebies. Let’s not split hairs. You read correctly TWO ingredients. Chicken and Salsa. Hence the name salsa chicken.
We’re not trying to do quantum physics around here, just trying to put a delicious and nutritious meal on the table. This also happens to be one of the quickest crock-pot slow cooker meals you can make. It takes under 3 hours. If ever there was a reason to shout winner winner chicken dinner this would be it.
Well and because it’s just plain and simple fun to say.
The chicken is so tender it shreds in seconds using two forks. Seems two is the name of the game with this recipe. We like to make it into TACOS and nachos or just plain fork it into our mouths.

Slow Cooker Salsa Chicken
Ingredients
- 4 chicken breasts
- kosher salt/pepper
- 2 cups chunky salsa
Instructions
- Place chicken into crock-pot slow cooker. Season with salt and pepper.
- Pour salsa over chicken. Stir to coat.
- Place crock-pot slow cooker on LOW (or 250 degrees) for approximately 2 hours OR until chicken is tender and falls apart.
- Shred chicken using 2 forks.

Hi Richard, yes mine cooked in 2 hours at 250 degrees. It will depend on the thickness of your chicken as well. Cook until tender and falls apart easily.
