Pink Lemonade Icebox Pie

Pink Lemonde Icebox Pie

With the weather about to start heating up the last thing I will want to do will be to heat up my oven and by default my kitchen. Air conditioning is expensive yeah? I make A LOT of no bake treats in the spring and summer. My sweet tooth can not suffer because I don’t want to spend more on my air conditioning bill.

That would be negligent of me. I can’t let that happen, it would be shameful. Hello no bake beauties. These are so simple it’s almost a non recipe. Simple is a good thing so let’s just focus on that.

Pink Lemonde Icebox Pie

You CAN make your own graham cracker crusts (you over achiever you) or you could use prepared crusts. This time I went with prepared because well shortcut. You can choose one large graham cracker pie crust or go with the mini graham cracker crusts. I went with mini this time. Why? Well firstly there is no slicing (no pressure to get that perfect slice – am I the only obsessive slicer?).

Secondly, you can pick up the mini pie and eat it without having to break out the silverware  (no forks to wash – YES!) and lastly I don’t feel nearly as bad eating multiple mini pies. It makes me feel dainty. Unreasonable, absolutely but I’m going with it.

Pink Lemonde Icebox Pie

These pies are the perfect shade of light pink, if you want to bump up the shade to a plumper pink food coloring will do the trick. If you can’t find frozen pink lemonade concentrate, frozen raspberry lemonade raspberry concentrate is a great substitute (garnish with fresh raspberries – I’m all about that garnish girls!)

    I love pink lemonade icebox pie. It’s like a spring tradition. My dad was a pink lemonade fanatic so I always dig seeing recipes that put a spin on it. Very cute.
