I’m not a morning person. It’s quite possibly the understatement of the decade. I really am NOT. At all. If I could get away with not talking to anyone until say oh after 10 a.m. I would. Sadly that’s not how things work. Thank goodness for cappuccino which makes me tolerable. Once that’s into my system I’m all unicorns and glitter.

Well not really, maybe just glitter. Not being a morning person means that I like to have a quick option(s) for breakfast. IF I can make said breakfast the night before, even better. 

Apple Walnut Muffins

These Apple Walnut Muffins are just that. Easy and insanely delicious. They’re packed full of fresh apples, crunchy walnuts and the secret ingredient, Plum Organics Beetbox Berry Mashups, making them berry good for you (at least in my opinion) ; )

Apple Walnut Muffins

You can make these muffins the night before and just pop them into the microwave to warm them if you like yours on the warm side (I do). They’re perfect at room temperature too, if you’re not into warming or just don’t feel like taking those extra steps to the microwave because you’re starving (been there). OR you could even double the recipe and freeze what you’re not planning on using straight away, taking them out as needed.

They’re also great in lunchboxes, for an after school snacks or just because you’ve got a muffin craving. Okay they’re great all the time.

    Another non-morning person here. I have to quietly and gently ease into the day. Jumping right out of bed and cooking breakfast? Nope. Not happening. I’d love to wake up and find one of these gorgeous muffins and a creamy cup of coffee waiting.

    I am not a morning person either. I wake up early, but prefer not to interact with humans prior to 10 or 11. These muffins look like the perfect way to start the day on a good note!

    Walnuts and apples pair so well together, and these muffins sound like my kind of breakfast (I hate making breakfast so grabbing a muffin on the go is great!)

    These look so delicious – just perfect for autumn! And I love your suggestions about gently rewarming them in the microwave in the morning, or even making a double batch and freezing some. Easy-peasy! Definitely a great partner for those cappuccinos … and the starting point toward embracing unicorns and glitter (hahaha!).

    Hahaha I’m so not a morning person either! I like to get up and do my own thing before I try and be polite to other people…lol. However if I woke up to these muffins it might make me a little happier a lot faster 🙂

    I am not a morning person either. 10am-11am is normally the earliest time in the morning when it’s safe to talk to me. YES for making these the night before. I want something I can just grab in the morning!

    Ha, right there with you. I hate mornings and always have. Even after 25 years of getting up early with kids I never got used to it. I never will. I’m a night owl. Just who I am. I try to avoid people till about noon. It’s safer for everyone involved. Ha.

    Love these muffins. They remind me of my sister, she loves apple muffins. She picks her own apples in her yard. And shares the apples with the deer. Ha. I think she’s Cinderella. In hiding.
