I am an all in kind of girl. Once I make up my mind to do something (now this could take me a while mind you) I’m GOING to do it. This year I decided it was time to move from the back of a motorcycle to piloting my own. I decided on a Saturday, bought my bike that day, got my permit on Monday and learned to drive her (I’m fully licensed and endorsed now, because safety first y’all).
That was 7 months ago and I haven’t looked back since. I’m on her every chance I get. I’m only wondering why in the world it took me so long to go for it. Why wait, do that thing that you’ve been contemplating. Not quite ready to take a big plunge?
Well how about a small plunge? Eat that bowl of carb loaded deliciousness you’ve been wanting, grab your big girl (boy) spoon and dive in! You can always work it off later.
That’s my motto at least. A bowl here, a workout there. As much as I hate exercising (and trust me the best part of a workout for me is when it’s over. Amen. The end.) I do it so I can eat things like a (giant) bowl of Risotto. Because if I’m going to eat it, I’m going to really EAT it. No little toddler bowls or small spoons for me. Nope.
One of my favorite types of risotto (and that in itself just sounds wrong because I’ve really not met one, unless it’s cooked poorly, that I didn’t like) is a nice deep rich and woody mushroom risotto. It speaks to my ‘shroom loving heart. I’ve made plenty a mushroom risotto but this is the first time I decided to NOT stir in the mushrooms, instead opting to crisp them to brown buttery perfection and then top the risotto with them.
I’m smacking my forehead for not doing this sooner too, it’s the bomb risotto diggity and you should really give it a go. Sooner the better and if you’re close invite me over for goodness sake. I don’t do dishes but I will bring wine ; )

Risotto is my weakness and I’m totally turned Thomas into a risotto lover too! My favorite risotto is with mushrooms so this is totally my kind recipe! It’s beautiful!

Crisping the mushrooms is a great idea. What a nice contrast to creamy risotto. Wine is a legit trade off for not doing dishes.

I love your philosophy! And like you, I have never met a bowl of perfectly cooked risotto I didn’t love. Love the idea of topping it with crispy onions!
