Lemon Icebox Bars

I love lemons. Like I eat them like candy love them. Yes, I’m one of those people. I like them in my water, I like them sliced. I like lemon head candies, I like them in all the desserts. You get the picture. Lemon all the things. Yes, please and thank you.

Want to know what’s even better than a lemon dessert to me? A NO BAKE lemon dessert. An easy peasy throw it together no bake luscious lemon treat. That’s what I’m talking about.

Lemon Icebox Bars
No fancy ingredients that you would need to go to a specialty market for. Just simple ingredients that (if you bake often) you may already have in your pantry. The hardest part of this recipe is the waiting. It does need to set up for a bit so it’s a good idea to plan on making it the night before.

It’ll be hard I know, but trust me make it the night before. When you open the refrigerator and see the pan there the next day you’ll be so glad that you did.

If you like cheesecake, you’ll love these no bake lemon icebox bars. They’re creamy, dreamy and just plain delicious.

    I’m s big fan of citrus and quick recipes. I have made orange cheesecake several times, but I haven’t found a lemon version that ticks with me. Finally, I can make one now.
