Strawberry Balsamic Gelato.
This might be the summer our ice cream maker breaks. It’s not quite July and we’ve been giving it a workout. You know the kind of workout like it’s early January when everyone flocks to the gym to keep to those New Year’s Resolutions? Yep, that kinda working out.
Not that I would know anything about that. Up until today we’ve been making sorbets , like they were going out of style. Today we’ve taken 2 pounds of fresh strawberries and we’re taking a 180 to the creamier side of frozen treats. Can you say gelato?
What Eggs Do You Use?
It’s one of my favorite treats and one of my kids’ favorite treats and we make it all summer long. I always start out with a custard base made of egg yolks and sugar. We use Safest Choice Eggs. What is Pasteurization?
What is pasteurization you ask? Pasteurization is a century-old process that destroys pathogens through simple heat, and is well-known for its role in making milk and juices safe to enjoy. To pasteurize a food means to destroy harmful microorganisms (e.g., bacteria and viruses) by applying a precise amount of heat for a specified period of time.
This straightforward food safety technique was invented by French chemist and microbiologist Louis Pasteur in 1864. Pasteurization is an all natural process, in that it involves only heat (not chemicals or irradiation).
Safest Choice eggs go through a series of warm water baths to eliminate bacteria. It’s that simple!
So when your kids want to taste the custard, or lick the spatula, before you put it into the ice cream maker you don’t have to worry. It’s safe. Now who wants a scoop or two of this before my kids eat it all?

Strawberry Balsamic Gelato
Ingredients
- 3 cups whole milk
- 1 cup heavy whipping cream
- 6 Safest Choice Egg yolks
- 1 cup plus 4 additional tablespoons Dixie Crystals granulated sugar
- 2 cups fresh strawberries – sliced
- 2 tablespoons balsamic cream
Instructions
- Into the bowl of your stand mixer add: egg yolks, and 1 cup of sugar together. Using the paddle attachment, continue mixing until light and creamy.
- WHILE egg yolks are mixing, into a large, heavy bottom, sauce pan add milk, heavy whipping cream and 2 tablespoons sugar. Heat over medium heat stirring frequently until sugar dissolves and mixture warms {but not boils} Remove from heat.
- Temper egg yolk mixture by adding some of the warm milk/cream mixture to the egg yolk mixture. GRADUALLY pour egg yolk mixture to the milk/cream mixture and stir well to combine.Cook over medium heat until mixture thickens/coats the back of a wooden spoon.
- Remove from heat. Allow mixture to cool.
- WHILE the mixture is cooling, place strawberries, remaining 2 tablespoons sugar and balsamic cream into your blender (or food processor) and puree.
- Pour pureed strawberries into cream mixture. Stir to combine and transfer to refrigerator to chill completely.
- Once chilled, place into your ice cream maker and follow manufacturer's directions for churning.

Strawberries and balsamic go so well together. Homemade ice cream is the best! I also love Safest Choice eggs. It’s so nice eating cookie dough and poached eggs without having to worry.
