It’s only when I make homemade pasta that I realize how much I miss making it and should do it more often. I never ever cease to be amazed at how flour and eggs can transform into pasta right before my eyes (and yes no box required). We’ve already shared BEET PASTA and SPINACH PASTA now we’re spicing it up a wee bit and we’re kneading up Roasted Red Pepper Pasta. Now you could use jarred roasted red peppers BUT if you’re going to take the time to make your own pasta why not char fresh red bell peppers yourself. It’s not hard and you’ll have the added benefit of scaring your children who think you’re about to serve them burnt food.

Am I the only one who thinks that’s funny? Once you’ve charred up the peppers it’s time to blitz them into oblivion aka puree them in the blender. Simple right? Even simpler if you have an amazingly powerful blender like a Vitamix. You know the one. This blender can do everything. It seriously replaces 8 kitchen appliances. It can grind it’s own flour people. I can’t wait to try that BUT I ordered 22 pounds of 00 flour on Amazon to kick off my pasta and bread making marathon so we’ll have to try that feature out for ourselves later. But I watched a video so I know it’s true.

Roasted Red Pepper Pasta

What You Will Need:

  • 3 1/2 cups 00 flour
  • 3 eggs
  • kosher salt
  • 1/2 cup roasted red pepper puree

What To Do:

  1. Into your stand mixer add flour, eggs and salt. On low speed mix until somewhat combined. Add red pepper puree. Continue mixing until a ball has formed. Scrape the edges of the bowl as necessary. NOTE: If mixture is too “wet” add additional flour. If mixture is too “dry” add more red pepper puree.
  2. Switch to dough hook and knead dough until it is tacky but no longer sticky.
  3. 3Wrap dough ball in plastic wrap. Transfer to refrigerator to rest for at least 30 minutes.
  4. Unwrap dough and cut into four equal sections. Working with one section at a time. Flatten the dough slightly. Run dough through the pasta attachment until it’s to your desired thickness {will depend on the type of pasta shape you are making}. Next cut it using the attachment of your choice.
  5. Hang pasta to dry for approximately 5 minutes. To cook fresh pasta: Into generously salted boiling water add pasta and cook for approximately 2-3 until al dente. Drain. Dress with appropriate sauce.

    my son & i loves to make fresh noodles though i mostly make it by hand so winning this blender will definitely going to make our noodle making so much fun & a lot easier & oh a lot cleaner LOL.

    Soup. Every time I make soup in my old-fashioned Waring blender it explodes all over. It would be nice not to have to scrub my ceiling every time I make a batch of soup!

    It’s one of the very few appliances I need for my kitchen. There are just so many things I would make. My smoothie in the morning for one would be so much easier to make if I had a Vitamix. I never even thought about making pasta in one, but sure, why not!

    This is the one thing I don’t have in my kitchen! I absolutely would love this Vitamix. My daughter is a runner, a very healthy eater but eats like a bird. I really want to make healthy smoothies and soups and many other things she can drink to keep her weight up. This would be so good for the entire family.     I would make my smoothies everyday (sometimes multiple times a day)and I would make my salad dressing in this Vitamix as well as soups and I am sure I will come up with many things. I have always wanted a Vitamix.

    The VITAMIX is powerful, time saving and amazingly versatile. I’ve had the opportunity to use them at friends’ homes. There is almost nothing it can’t do … fast, efficiently and better. I have long wanted one of my own.
    Certainly it can make smoothies, peanut butter and humus but, I am looking forward to using the VITAMIX to make a Sauce Nantua … and doing some serious bread baking !!!

    That pasta looks great! I really want to make pasta this week for Valentine’s day and we have a ton of red peppers in the fridge at the moment, so this would be perfect.

    Vitamixes are amazing machines (my parents had one when I was growing up). While I would use it for a lot of different kitchen tasks, I think I would probably use it mostly for making beverages like almond milk and fruit/vegetable smoothies, since the blenders I’ve tried that with previously aren’t strong enough. My smoothies seem to always have full seeds in them and I’m afraid I’m going to work my blender too hard!
