Honeysuckle Watermelon Cooler

If you were to ask me to describe summer in a glass I would give you a sip of this cocktail. It screams summer. This cocktail reminds me of the spiked watermelon that we used to enjoy during our college days except now I can enjoy it in a glass. Because of course we’re way more refined. That’s it. We’ve also upped the ooh and ah factor by adding our  HOMEMADE HONEYSUCKLE SIMPLE SYRUP.

You’re going to want to keep this handy all summer long. You’ll find yourself using this simple syrup in all types of summer sippers (that can be spiked or not.) Sweet tea flavored with Honeysuckle anyone?

Honeysuckle Watermelon Cooler

This is also a great way to use up any extra watermelon OR perhaps that watermelon you picked up that isn’t the sweetest melon you’ve ever scored. Turn it into juice and then make your cocktail (or mocktail, you can easily make this kid friendly by omitting the vodka). Options you know we love them.

Honeysuckle Watermelon Cooler

What You Will Need:

  • 1 cup watermelon juice
  • 1 ounce vodka
  • 1 ounce honeysuckle simple syrup
  • 1 lime wedge
  • fresh mint to garnish
  • watermelon wedge to garnish

What To Do:

  1. Place watermelon juice, vodka, honeysuckle simple syrup, and lime wedge into a cocktail shaker filled with ice.
  2. Shake. Strain into glasses (ice optional)
  3. Garnish with fresh mint and watermelon wedge.

    I know I’d love this, I discovered a honeysuckle vine in our yard and make tea, it was incredible! Pairing it with watermelon sounds so refreshing!

    Honeysuckle used to grow wild near my family’s beach house, and I would snag some whenever I passed to suck the sweetness out. This cocktail looks so good — and I love that it brings that little element of nostalgia for me too.
