Have I mentioned lately that one of my new favorite vegetables is cauliflower? ‘Tis true. I might have a problem considering I buy a head of it every time I’m at the market. Every. Single. Time. I kid you not. I guess there are worse things to be enamored with. 9/10 I roast it up with just a simple drizzle of olive oil and sprinkle of salt, pepper and chili pepper flakes. Because spice is nice.
I’ve also heard that spicy foods help to speed up your metabolism. I can use all the help I can get so woot. Winner winner roasted curried cauliflower soup dinner. Okay so maybe that doesn’t exactly rhyme but you know what I mean.
This soup starts out by you guessed it ROASTING a head of cauliflower. I like to roast mine while I’ve already got the oven going, making and/or baking well whatever (as long as it’s the same temperature) multi tasking. Time is money. Gas is expensive right? I majored in multi tasking. Well business but same thing in my book. You can roast the cauliflower the night before or a few days before. This will cut back on your cooking to table time once you have that craving hit (or maybe that’s just me).
I seem to always have a container of roasted cauliflower in my fridge lately because I won’t even dare throw a few pieces out (did I mention my obsession with it). It comes in handy when I’m ready to make SOUP. Ah good stuff.
We’re ticking all kinds of good for you boxes with this recipe. This soup is GLUTEN FREE, VEGETARIAN, DAIRY FREE and LOW SUGAR. More importantly in my book, it’s delicious and did I mention it’s CREAMY without dairy. I know, I know it sounds too good to be true but it’s true. So true and delicious. Did I mention delicious?
Now for those of you who are timid of the heat, you can cut back on the amount of curry paste. No big deal. NOT a fan of thicker soups? Feel free to cut it with a little more vegetable stock or water. You’re eating it. Do what you like!

this might be a silly question but can i make this without the potato? i too am crazy about cauliflower and actually just last night roasted a head with curry and it was delicious! i am planning to try this without the potato but wondering if you would recommend it. thanks!!
