Flourless Chocolate Cake with Boozy Berry Sauce
If you’re gluten free you’re probably familiar with flour-less cakes and can sing their praises with the dessert choir. If you’re not familiar with gluten free desserts this might be new to you. You may even have your eyebrow raised and be thinking how can you make a cake without flour? You can, you really really can.
Once you have a bite of one you’ll be singing the praises along with the rest of the choir. Flour-less is fantastic. Not convinced? How about if I told you the cake portion only takes 4 ingredients? 4 ingredients that are staples in most kitchens. You probably have everything you need.
That boozy berry sauce is just the proverbial raspberry on the flour-less cake. Chocolate cake drizzled (or dripping you decide) with a boozy berry sauce? You betcha. That make this dessert a perfect way to end your Valentine’s dinner. You don’t even have you tell them it’s flour-less.
They’re not going to miss it. Promise.
The top of the cake develops a nice crust that crunches when you plunge your fork into it. It’s actually one of my favorite parts of the cake. Don’t let that exterior fool you into thinking this would be dry. Nope. Not a chance, the middle of the cake is fine as fudgy wine. You have had chocolate wine haven’t you? I had my doubts initially but it’s good stuff.
I found it at the store that’s has a market in their name and has stuff from all over the world. You should look into it. Not your thing? Go ahead and serve up a glass (or two, I mean it’s Valentine’s Day after all) of Chardonnay that you’ll already have on hand from the boozy portion of the sauce.
What else do I love about this cake? Not that I really need another reason BUT you can make it in either mini spring form pans for the perfect individual portions OR just make one large cake. Since it’s fantastic warm out of the oven OR warmed up in the microwave you can even make it the night before. Ready to get down with all that gluten free goodness?
