Quick and Easy Homemade Chicken Noodle Soup. On the table in less than 30 minutes.
Ingredients
- 1 tablespoon unsalted butter
- 1/2 onion - minced
- 1 stalk celery - minced
- 2 carrots - peeled and sliced in round
- 10-12 cups homemade chicken stock
- 1 1/2 cups egg noodles
- 2 cups leftover roast chicken
- kosher salt/black pepper
- 4-6 sprigs of fresh thyme
Instructions
- Into a saute pan melt butter over medium heat. Add onion, celery and carrots. Stir to combine. Cook until onions are translucent.
- Add chicken stock and bring to a boil. Season with salt, pepper to taste.
- Reduce heat, add egg noodles and cook until just softened. Stir as necessary.
- Add chicken. Stir to combine. Lower heat to simmer and continue cooking just until chicken is warmed through. Check seasoning, adjust if necessary.
- Garnish with Fresh thyme.
Notes
You can substitute turkey for chicken.
If you prefer your soup with more broth, add additional stock.
