Balsamic Braised Short Ribs
Slow Cooker Balsamic Braised Short Ribs.
Ingredients
- 2 pounds beef short ribs, cut into individual ribs
- 1 teaspoon kosher salt, plus more for seasoning
- 1/4 teaspoon freshly ground black pepper plus more for seasoning
- 1 teaspoon Italian seasoning
- 1 tablespoon extra virgin olive oil
- 2 cups beef stock
- 1 cup red wine
- 1/4 cup balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon packed light brown sugar
- 2 or 3 fresh thyme sprigs
Instructions
- Season the ribs all over with the salt, pepper, and Italian seasoning.
- In a heavy-bottomed pan over medium heat, heat the olive oil. Add the ribs and cook, turning, until they’re browned on all sides.
Transfer the ribs to your slow cooker insert. - Combine the beef stock, red wine, vinegar, mustard, and brown sugar and add to the ribs. Place the thyme on top. Cover the cooker and cook on Low heat for 8 hours. Taste and add
more salt and pepper, as needed. - Refrigerate any leftovers in an airtight container or freeze for future use.
