Limoncello Cookies

Limoncello Cookies.

I’m practically giddy that it’s Daylight Savings this weekend. We’re springing forward y’all. I don’t know about you, but I’m beyond ready for longer days. Longer days mean spring and summer are right around the corner along with warmer weather. I’m not a cold weather person. Winter is not my jam. I like boots and a roaring fire but otherwise I could skip the entire thing and be okay with it. I’ve considered moving even further South every winter. Truth. These Limoncello cookies are like spring and summer all balled up into a few glorious bites.

Limoncello Cookies

It starts with a scaled down version of my MOMMA’S SUGAR COOKIE recipe. They’re soft and chewy and are amazing on their own. We’ve taken them a step further and added a luscious boozy Limoncello glaze. It’s like having a party in your mouth while the sun is shining down on your face. You may or may not need to wear sunglasses while enjoying these. Up to you.

Before you get started making these cookies, you’ll need Limoncello. You could purchase this at the store, but you can also make it yourself. We used our homemade LIMONCELLO. Now is a great time to go ahead and make a batch or two so you have it to sip on all summer long. It takes a little time for this to come together. So best you start now. You’ll want to store it in the freezer because it’s best served chilled.

    daylight savings time has got my mornings screwed up though; getting up at what my body thinks is 5am is just too early. my mornings would probably be happier with a few of these cookies though (;
