If you’re a fan of all things lemon like I am, you probably already love lemon bars and they don’t need an introduction into your lemon loving world. Well we’ve taken the classic shortbread bottomed treat and topped it with a few twists. Cranberry sauce. Yes, I said cranberry sauce. Just like you served up at Thanksgiving to compliment the turkey.
While fresh cranberries are still in season it’s the perfect time to mix up more of that tart of a side dish. Cranberry sauce isn’t just for Thanksgiving anymore people. Oh no, go ahead and break that mindset. History wasn’t made by well behaved people now was it?

You can make the cranberry sauce in advance of the bars so take advantage and get that out of the way. Saving time, left and right. We’re building layers here. Up next is the crust. It’s a scrumptious and buttery shortbread crust. It comes together quickly and easily. Simple enough right?
While that’s baking we’ll move onto the lemon layer. All the lemon please. We’re basically making a curd like filling. You’re going to pour it onto your HOT crust and pop it back into the oven. Once it’s golden edged and set you’re going to let it come to room temperature and then chill out. Yes, it needs time to firm up and chill down. Into the fridge it goes. You can go about your regularly scheduled programing (ehem life) while this is doing it’s thing.
When you’re ready to pull it all together, we’ll grab our homemade cranberry sauce and then the kicker? White Chocolate Sauce. It’s drizzled all over those beautiful bars. This isn’t a bar that you’ll be able to eat with your hands unless you just like to get messy, otherwise I suggest a fork. Fork yeah!
