This post is sponsored by Dixie Crystals. Opinions are my own. Dark, rich and Chewy Ginger Molasses Cookies are a cross between a gingerbread cookie and a molasses cookie. As if that wasn’t delicious enough they’re then dipped in white chocolate.
One of my favorite holiday cookies are chewy ginger molasses cookies. They’re soft, chewy and have big bold flavor. Think a cross between a gingerbread cookie and a molasses cookie. Delicious right? I really didn’t think those cookies could get any better but then we dipped them in chocolate and they leveled up.

Why do you chill cookie dough?
Chilling the cookie dough is an important step. In a nutshell, it helps the cookies spread less when baking. How does that work? Chilling the dough beforehand solidifies the fat in the cookies so that when the cookies bake, the fat in the chilled cookie dough takes longer to melt. Longer time to melt means the cookies spread less.
How do you roll dough into balls?
Place a scoop of cookie dough into the palm of your hand, using a circular motion with the palm of your other hand, gently roll the dough between both palms to create a ball shape.
How do you keep dough from sticking to ice cream or cookie scoop?
Simply spray the scoop with unflavored cooking spray to keep dough from sticking. If you notice the dough starts to stick again, simply re-spray scoop.
