Break out the air fryer for this easy twist on fried rice. This Vegetable Fried Rice requires only a few ingredients and comes together quickly.
Are you an air fryer fan? I’m finding that you can make almost anything in an air fryer. We’ve made everything from STEAK BUNDLES to SALMON so why not fried rice? This recipe comes together lickety split (probably in less time than you could attempt a delivery) and can be served as either a delish meal or a side dish. Options, you know we love them.
Part of the reason this dish comes together so quickly is because we make use of LEFTOVER white rice. I’m a huge believer in repurposing leftovers. Waste not. Want not.
TIP: I find a RICE COOKER to be an incredibly helpful kitchen appliance, especially one with a keep warm feature. The keep warm feature in my rice cooker allows me make a large batch and then use it over the course of a few days. Which means I save time when preparing additional meals throughout the week that include rice.
WHAT INGREDIENTS DO I NEED TO MAKE AIR FRYER FRIED RICE?
You’ll need the following 7 KEY ingredients to make this air fryer vegetable fried rice at home plus an Air Fryer.
- reduced sodium soy sauce
- sesame oil
- light brown sugar
- leftover white rice
- egg
- peas and carrots blend
- green onions

Air Fryer Vegetable Fried Rice
Use leftover rice to make this easy and delicious Air Fryer Vegetable Fried Rice
Ingredients
- 3 tablespoons reduced sodium soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon light brown sugar, packed
- 2 cups cooked white rice, preferably leftover rice
- 1 egg - beaten
- 1/2 cup thawed peas and carrots blend
- green onions - sliced on bias for garnish
Instructions
- Into a medium bowl mix together, soy sauce, sesame oil and brown sugar. Add rice. Mix to combine.
- Pour rice mixture into 7" round air fryer insert or oven safe round metal cake pan.
- Place cake pan into 5.3-quart air fryer.
- Close air fryer, cook at 370 degrees for 10 minutes, stirring halfway through.
- Open air fryer, pour egg over rice. Close air fryer and continue cooking for 2 minutes or until egg is cooked through. Stir to break up egg.
- Open air fryer, add vegetables. Close air fryer and cook for additional 2 minutes.
- Garnish with green onions.
